-1 pound of large shrimp, peeled and deveined
-1/4 cup of all-purpose flour

-1/4 cup of finely diced celery
-1/4 cup of finely diced bell pepper
-1/4 cup of heavy cream
-1/4 cup of grated Parmesan cheese
-1/4 cup of breadcrumbs
-1 egg
-Salt and pepper, to taste
-Vegetable oil, for frying
Instructions:
- Begin by making the shrimp mixture. In a large skillet, melt the butter over medium heat. Add the onions, celery, and bell pepper and sauté until they are softened, about 5 minutes.
- Add the flour and stir until it is well combined. Cook the mixture for an additional 2 minutes.
- Slowly pour in the heavy cream, stirring constantly, until the mixture thickens.
- Add the grated Parmesan cheese and stir until it is melted and well combined.
- Remove the skillet from heat and add the shrimp. Stir until the shrimp is evenly coated in the mixture.
- Season the mixture with salt and pepper, to taste.
- Allow the mixture to cool completely.
- Once cooled, form the mixture into small balls, about 2 inches in diameter.
- In a shallow dish, beat the egg.
- In another shallow dish, add the breadcrumbs.
- Dip the shrimp balls in the beaten egg and then roll them in the breadcrumbs.
- Heat the vegetable oil in a large skillet over medium to high heat.
- Carefully place the shrimp balls in the hot oil. You will want to fry them for about 2-3 minutes on each side, or until they are golden brown and crispy.
- Remove the croquettes from the oil and place them on a plate lined with a paper towel to drain.
- Serve the croquettes hot with your favorite dipping sauce, and enjoy!
